🍯Ingredients
6 bone-in, skin-on chicken thighs
1 lb baby potatoes, halved (or quartered if large)
3–4 medium carrots, peeled and cut into chunks
4 cloves fresh garlic, peeled and lightly smashed
3 tbsp olive oil, divided
2 tbsp Fingerlakes Honey Company Roasted Garlic Dip Mix, divided
½ tsp paprika (optional, for color)
Fresh parsley or dill, chopped (optional garnish)
🥣Directions
Preheat oven to 350°F. Line a large baking sheet with parchment paper or lightly grease it.
In a large roasting pan or casserole dish, toss chicken thighs, potatoes, garlic cloves, and carrots with olive oil and 1 tbsp Roasted Garlic Dip Mix until evenly coated. Spread in a single layer in pan.
Arrange chicken thighs skin-side up among the vegetables, leaving space between pieces for even roasting.. Then, sprinkle evenly on top of everything with the remaining Roasted Garlic Dip Mix and paprika if using.
Bake for 1 hour and 25 minutes or until chicken skin is golden and crispy, internal temperature reaches 165°F, and vegetables are fork-tender.
Remove from oven and let rest for 5 minutes. Garnish with fresh herbs if desired and serve warm.
Tips & Variations
For extra-crispy skin, broil for the last 2–3 minutes (watch closely!).
Add a drizzle of honey or hot honey just before serving for a sweet-savory contrast.
Leftovers make an excellent next-day grain bowl or wrap filling.
