Ingredients
1 pound cooked corned beef, shredded
1/2 cup water (for reheating corned beef)
1/3 cup mayonnaise
1/2 cup Greek yogurt
1/4 cup Dijon mustard
1/4 cup Fingerlakes Honey Company honey
2 teaspoons poppy seeds
1 head savoy cabbage, washed and thinly sliced
2 carrots, washed, peeled, and grated
1/2 red onion, diced
12 slider buns, any variety
DIRECTIONS
Add shredded corned beef to a slow cooker or pot with 1/2 cup of water. Warm on low heat while preparing the slaw.
In a large bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, honey, and poppy seeds until smooth and creamy.
Place the sliced cabbage, grated carrots, and diced red onion into the bowl with the dressing. Toss well to coat all the veggies.
Cover the slaw and refrigerate while the corned beef finishes warming. This allows the flavors to meld and the slaw to stay crisp.
Open each slider bun and add a generous spoonful of warm corned beef. Top with a heaping scoop of honey mustard slaw.
Serve immediately while warm, and try not to eat them all before they make it to the table.
