We use our raw Fingerlakes Honey to mellow out the bold kick of sriracha, creating a sticky glaze that clings to tender, juicy pulled chicken. Serve it over fluffy, crispy-edged waffles and top it all off with a drizzle of cool buttermilk ranch made with our own herb dip mix. It’s sweet, spicy, creamy, crunchy, and absolutely unforgettable.

🍯Ingredients

For the Honey Sriracha Pulled Chicken

  • 2 lb boneless skinless chicken thighs

  • 2 Tbsp Sriracha hot sauce

  • 2 Tbsp Fingerlakes Honey Company honey

  • 1 tsp light soy sauce

  • 1 clove garlic minced

  • kosher salt

  • fresh cracked pepper


For the Buttermilk Waffles

  • 2 large eggs

  • 1 ¾ cup light buttermilk

  • 1 ¾ cup all-purpose flour

  • 1 tsp baking soda

  • 1 ½ tsp baking powder

  • ½ tsp kosher salt

  • 4 Tbsp unsalted butter melted


For the Buttermilk Ranch

  • 1 tablespoon Fingerlakes Honey Company Ranch Dip Mix

    1/3 cup plain Greek yogurt or sour cream

  • 1/3 cup mayonnaise

  • 1/3 cup milk

  • 2 tsp fresh lemon juice

  • 1 Tbsp fresh flat-leaf parsley minced (for garnish)

🥣Directions

  1. To prepare the chicken, season the chicken thighs with salt and pepper add to the crockpot. Whisk together the honey, Sriracha, and soy sauce and pour over the chicken. Cook on low 8-10 hours. Shred the meat using two forks. Set aside.

  2. To make the Buttermilk Ranch, simply combine the listed ingredients. Store in the refrigerator until use.

  3. To make the Buttermilk Waffles, whisk together the ingredients listed in the order given. Cook to golden brown in the waffle iron. Waffles can be put on a rack on a cookie sheet and kept warm in a 200F oven while the rest of the batch is cooked. In my waffle iron (which is smallish), I get 8 waffles using 1/2 c batter for each.

  4. Serve the waffles topped with pulled chicken and Buttermilk Ranch. Sprinkle fresh parsley over top.


Notes

  • The Buttermilk Ranch dressing can be made a day ahead.

  • If the ranch recipe is on the thick side – you can always add a bit more milk to thin it if desired.

  • If you transfer the shredded chicken from the crockpot to a bowl or something, be sure to add plenty of sauce from the crockpot to keep the meat moist.
