Whether you’re serving it as a snack, side, or appetizer, this recipe brings out the natural sweetness of the zucchini (while giving it a zesty, spicy kick if you use hot honey!)

Ingredients

  • 2-3 zucchinis

  • 2-3 tablespoons olive oil, for pan frying the zucchini

  • 2 teaspoons Fingerlakes Honey Company honey

  • 1 tablespoon lemon juice, fresh squeezed

  • ¼ cup crumbled feta

  • 1 tablespoon dill, freshly chopped remove stems

  • Few turns cracked black pepper

DIRECTIONS

  1. Wash and remove the ends of your zucchinis.

  2. Slice them in half then slice them diagonally to create triangle shaped, bite sized pieces.

  3. Heat 2-3 tablespoons olive oil in an 11-inch non-stick skillet over medium high heat.

  4. Once the oil is hot but not smoking, add the cubed zucchini, center side down.

  5. Fry in the oil for 5-8 minutes or until they’re golden brown.

  6. Reduce the heat and flip the zucchini.

  7. Allow them to fry for 2-3 more minutes or until they are fork tender.

    You do not want them to get too soft or they will be mushy.

  8. Add the pan-fried zucchini to a plate.

  9. Add the honey, fresh squeezed lemon juice, crumbled feta, chopped dill and cracked black pepper.

  10. Serve and enjoy.
