Persimmon & Feta Salad
This Persimmon and Feta Salad is a vibrant, refreshing dish that perfectly balances the sweetness of ripe persimmons with the tangy saltiness of feta cheese. Paired with crunchy nuts and a drizzle of honey dressing, it's an elegant yet simple salad that works beautifully as a side dish or a light meal.

Ingredients
4 cups mixed greens (arugula, spinach, or spring mix)
2 ripe persimmons, thinly sliced
½ cup crumbled feta cheese
¼ cup Honey Roasted Pecans or toasted regular pecans or walnuts
¼ cup pomegranate arils (optional, for extra color and tartness)
2 tablespoons Fingerlakes Honey Company honey
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar or apple cider vinegar
Salt and freshly ground black pepper, to taste
Substitute: you can substitute the following for persimmons-
Pears – Similar sweetness and soft texture
Apples – Crispier but still sweet and refreshing
Mango – Adds a tropical sweetness and soft bite
Peaches or Nectarines – Great for summer, juicy and slightly tangy
Figs – Soft, sweet, and pairs well with feta and honey
Oranges or Tangerines – A citrusy twist with a juicy texture
DIRECTIONS
Prepare the dressing: In a small bowl, whisk together the honey, olive oil, balsamic vinegar, salt, and black pepper until well combined.
Assemble the salad: In a large serving bowl, layer the mixed greens, sliced persimmons, crumbled feta, and nuts. Sprinkle with pomegranate arils if using.
Dress the salad: Drizzle the honey dressing over the salad just before serving. Toss gently to coat.
Serve immediately and enjoy!
Notes
For a more robust salad, add grilled chicken or toasted quinoa for extra protein.
If persimmons are out of season, try substituting with pears, apples, mango, peaches, nectarines, figs, or oranges.
