🍯Ingredients

  • generous amount of chili pepper flakes.

  • salt and pepper

  • ¼ cup soy sauce

  • 2 teaspoons sesame oil

  • 1 tablespoon mirin (Japanese sweet wine)

  • 2-3 tablespoons Fingerlakes Honey Company honey

  • 1 tablespoon rice wine vinegar

  • 1/2 teaspoon corn starch

  • ½ cup sesame seeds

  • 4 (6 ounce) tuna steaks, 1/2 to 3/4" thick, sushi/sashimi grade

  • 1 tablespoon olive oil

  • wasabi paste, optional garnish (can be mixed in sauce as well)

🥣Directions

  1. Season tuna steaks on both sides with salt and pepper.

  2. Toast sesame seeds. Spread sesame seeds and chili peppper flakes (use more or less depending on spiciness) out on a plate, set aside

  3. Stir together soy sauce, sesame oil, mirin, and honey in a small bowl.

  4. Pour half into a separate small pan. Stir in rice wine vinegar, whisk in 1/2 tsp corn starch, and bring to a boil. Then reduce heat, simmering, until it thickens and set it aside as a dipping sauce.

  5. Coat tuna steaks with remaining soy sauce mixture

  6. Heat olive oil in a cast iron skillet over high heat until very hot. Place steaks in the pan; sear for about 30-40 seconds on each side.

  7. Press seared steaks into sesame seeds and pepper mixture on both sides to coat.

  8. Serve with dipping sauce and wasabi paste.
