This Spinach Apple Salad is a refreshing and flavorful dish that brings together crisp apples, tangy feta, and sweet dried cranberries with a delightful crunch from our honey almonds. Drizzled with Fingerlakes Honey Company’s Honey Poppyseed Dressing, it’s the perfect balance of sweet and savory. This salad makes a great side dish or a light, satisfying meal.

🍯Ingredients
6 cups fresh baby spinach leaves
½ cup dried cranberries
½ cup feta cheese, crumbled
½ cup chopped apple
⅓ cup Honey Cinnamon Roasted Almonds (or regular almonds) or Honey Roasted Pecans (or regular pecans)
⅔ cup vegetable oil
4 tablespoons apple cider vinegar
1 ½ tablespoons poppyseeds
🥣Directions
In a large bowl, combine baby spinach, dried cranberries, feta cheese, chopped apple, and almonds.
Toss gently to mix.
Make Honey Poppyseed Dressing- Combine all ingredients in a container with a lid and shake vigorously until fully combined.
Serve immediately with Honey Poppyseed Dressing drizzled over the top or on the side.
Notes
For extra crunch, toast the almonds before adding them to the salad.
Pears can be substituted for apples for a different flavor twist.
Add grilled chicken or salmon to make this a full meal.
