Creamy Coleslaw with Honey-Lemon Dressing

Ingredients
4 cups shredded cabbage (green or purple, or a mix)
1/2 cup shredded carrots
1/4 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
For the Honey-Lemon Dressing
3 tbsp Fingerlakes Honey Company’s Honey
2 tbsp lemon juice
1/4 cup mayonnaise
1/2 tsp Dijon mustard
Salt and pepper, to taste
DIRECTIONS
In a bowl, whisk together honey, lemon juice, mayonnaise, Dijon mustard, salt, and pepper until smooth and creamy.
In a large bowl, combine the shredded cabbage, carrots, red onion, and parsley.
Pour the honey-lemon dressing over the vegetables and toss until well-coated.
Let the coleslaw sit for about 10 minutes before serving, to allow the flavors to meld together.
