Ingredients
For the Crispy Cauliflower:
1 small head of cauliflower, cut into bite-sized florets
¾ cup all-purpose flour
¾ cup milk (or plant-based alternative)
1 cup panko breadcrumbs
2 tbsp Fingerlakes Honey Company Fiesta Dip Mix (Mild or Spicy)
Cooking oil spray
For the Honey Lime Avocado Crema:
1 ripe avocado
2 tbsp Fingerlakes Honey Company honey
2 tbsp fresh lime juice
½ tsp lime zest
¼ cup sour cream or Greek yogurt
¼ cup water (adjust for consistency)
¼ tsp salt
For Serving:
8 small taco shells (soft or hard)
1 cup shredded lettuce or cabbage
½ cup diced tomatoes
¼ cup chopped fresh cilantro
Lime wedges for garnish
DIRECTIONS
Prepare the Cauliflower: Preheat oven to 425°F (or air fryer to 375°F). Line a baking sheet with parchment paper.
Make the Batter: In a bowl, whisk together flour, milk, and Fiesta Dip Mix until smooth.
Coat the Cauliflower: Dip each cauliflower floret into the batter, then roll in panko breadcrumbs to coat evenly. Place on the prepared baking sheet.
Bake/Air Fry the Cauliflower:
Oven: Bake for 20–25 minutes, flipping halfway through, until crispy and golden.
Air Fryer: Cook at 375°F for 12–15 minutes, shaking the basket halfway through.
Make the Honey Lime Avocado Crema: Blend avocado, honey, lime juice, lime zest, sour cream (or Greek yogurt), water, and salt until smooth. Adjust water for desired consistency.
Assemble the Tacos: Warm the taco shells, then fill with crispy cauliflower.
Top & Serve: Add shredded lettuce or cabbage, diced tomatoes, and cilantro. Drizzle with Honey Lime Avocado Crema and serve with lime wedges.
