This is grilled cheese turned all the way up. The FHC Ultimate Grilled Cheese Sting Honey Sandwich layers crispy bacon, melty cheddar and American cheese, and tangy dill pickles with the signature sweet heat of Fingerlakes Honey Company Sting Honey. Using bacon fat (or butter) to crisp the bread adds an extra layer of rich, savory flavor, while the honey brings just the right amount of kick to balance it all out. The result is perfectly golden, irresistibly gooey, and packed with sweet, salty, tangy, and spicy goodness in every bite.

🍯Ingredients

  • 4 slices bacon

  • 8 slices rustic bread

  • 2 or more tablespoons reserved bacon fat or melted butter

  • ¼ cup Fingerlakes Honey Company Sting Honey (mild, medium, or hot) or plain honey

  • 4 slices cheddar cheese

  • 4 slices American cheese

  • 8 slices dill deli sandwich pickles, blotted dry


🥣Directions

  1. Place bacon in a large cast-iron or heavy-duty nonstick skillet and cook over medium heat, turning as needed, until crisp.

  2. Drain on paper towels and cut each slice in half.

  3. Let the pan cool, then remove and reserve the bacon fat if using for sandwich.

  4. Spread one side of each slice of bread with bacon fat or melted butter.

  5. Place 4 slices, buttered side down, on a work surface.

  6. Spread about 1 tablespoon of Sting Honey on each unbuttered side.

  7. Top each with 1 slice cheddar and 1 slice American cheese, 2 half-slices of bacon, and dill pickle slices (cut to fit).

  8. Add remaining bread slices on top, buttered side up.

  9. Heat the skillet over medium heat until a drop of water sizzles on contact. Add sandwiches and reduce heat to medium-low.

  10. Place a lid slightly smaller than the skillet directly on top of the sandwiches. Cook for about 5 minutes, until bottoms are golden and cheese begins to melt.

  11. Carefully flip and cook another 5 minutes, adjusting heat as needed to prevent overbrowning.

  12. Transfer to a cutting board, let cool slightly, then slice in half and serve warm.


TIPS:

  • Using bacon fat instead of butter adds an extra smoky richness that takes this sandwich from “really good” to “where has this been all my life?”
