Honey Glazed Corned Beef with Roasted Vegetables

Ingredients

  • 3-4 lbs corned beef brisket

  • ¼ cup Fingerlakes Honey Company’s Honey

  • 2 tablespoons Dijon mustard

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Salt and pepper to taste

  • 2 cups baby carrots

  • 2 cups baby potatoes, halved

  • 1 onion, quartered

DIRECTIONS

  1. Preheat oven to 350°F.

  2. In a small bowl, mix honey, mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper.

  3. Place the corned beef in a roasting pan and brush with the honey mixture.

  4. Add the carrots, potatoes, and onion around the beef and cover with foil.

  5. Roast for 2 ½ to 3 hours, basting occasionally, until the beef is tender.

  6. Slice the corned beef and serve with the roasted vegetables.
