DIRECTIONS
Preheat oven to 350°F.
In a small bowl, mix honey, mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper.
Place the corned beef in a roasting pan and brush with the honey mixture.
Add the carrots, potatoes, and onion around the beef and cover with foil.
Roast for 2 ½ to 3 hours, basting occasionally, until the beef is tender.
Slice the corned beef and serve with the roasted vegetables.
