🍯Ingredients
4 cups old-fashioned rolled oats
1 cup pecans, roughly chopped
½ cup pumpkin seeds
½ cup sunflower seeds
½ cup unsweetened shredded coconut
¼ tsp salt
¼ cup melted coconut oil or neutral-flavored oil
1 tsp vanilla extract
½ cup dried cranberries or raisins, optional
🥣Directions
Preheat oven to 325°F. Line a large rimmed baking sheet with parchment paper.
In a large bowl, combine the oats, chopped pecans, pumpkin seeds, sunflower seeds, coconut, and salt.
In a separate small bowl, whisk together the Pumpkin Spice Infused Honey, melted oil, and vanilla extract.
Pour the honey mixture over the oat mixture. Stir thoroughly until the oats, nuts, and seeds are evenly coated.
Spread the granola evenly over the prepared baking sheet.
Bake for 30–35 minutes, stirring gently every 10–12 minutes, until golden brown and fragrant.
Remove from the oven and let the granola cool completely on the baking sheet without stirring. This is what helps those nice crunchy clusters form.
Once completely cool, break the granola into clusters and stir in the dried cranberries or raisins, if using.
Store in an airtight container at room temperature.
