🍯Ingredients
4 cups mixed greens (arugula, spinach, or lettuce)
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup feta cheese or goat cheese (optional)
1/4 cup walnuts or pecans (optional)
For the Honey Balsamic Vinaigrette
2 tbsp balsamic vinegar
1/4 cup olive oil
1/2 tsp Dijon mustard
Salt and black pepper, to taste
🥣Directions
Make the Dressing
In a small bowl, whisk together honey, balsamic vinegar, olive oil, Dijon mustard, salt, and pepper until emulsified.
Assemble the Salad
In a large bowl, combine the mixed greens, cherry tomatoes, red onion, and cheese (if using). Toss gently to combine.
Dress the Salad
Drizzle the honey balsamic vinaigrette over the salad and toss gently again.
Serve
Top with walnuts or pecans (if using) and serve immediately.
