Our Autumn Honey is darker, richer, and more robust than our Spring harvest, with warm floral notes and a naturally caramel-like sweetness from goldenrod and other fall blooms.

Seasonal Flavors of Wildflower Honey-

Wildflower honey varies from season to season, depending on the weather, plant life, and foraging patterns of the bees. In spring, the honey is light and floral, thanks to blooming dandelions, clovers, and early fruit blossoms. In autumn, it deepens in color and flavor, infused with goldenrod, asters, and late-blooming herbs. This seasonal ebb and flow means each jar captures a moment in time—no two batches are ever quite the same.

Seasonal Details:

🌻Spring Honey: Early-season blooms — dandelion, honeysuckle, locust, fruit blossoms, clover. Light, sweet, and mild. Harvested: Early Summer (early July)

🍁Autumn Honey: Mid-to-late-season blooms — goldenrod, asters, wildflowers. Darker amber with richer, caramel-fruit flavor. Harvested: Early Fall (late September)
Do not refrigerate your honey. Store it in a warm pantry or cupboard. Honey lasts for many years- as long as no extra moisture is introduced… assuming you don’t eat it all first!

❄️WHAT IS CRYSTALLIZATION?

Raw honey naturally crystallizes, and that’s a good thing! It’s a sign your honey is pure, unprocessed, and full of pollen, enzymes, vitamins, and minerals.

Crystallization happens as glucose and fructose bind and form tiny crystals. Temperature, humidity, and light influence the rate. Crystallized honey is safe and delicious, just thicker in texture. Use the warm-water-bath method to return it to liquid.

If crystallization occurs, gently re-liquefy it by placing the jar:

in warm sunshine, or

in a warm water bath (110–120°F) with the lid slightly cracked open

Your honey will return to smooth liquid form every time.

Do not microwave honey, as it destroys beneficial enzymes.
