Ingredients
For the Chicken
2 boneless, skinless chicken breasts
1/2 cup buttermilk
1/2 cup flour
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp cayenne pepper (optional, for extra heat)
2 tbsp olive oil or butter (for pan-frying)
For the Glaze
1 tsp apple cider vinegar
For the Honey-Garlic Sauce
1/4 cup mayonnaise
1 tsp Dijon mustard
1 tsp lemon juice
For Assembling
2 brioche buns, toasted
1/2 cup arugula or lettuce
4 slices pickles (optional, but adds a nice crunch)
DIRECTIONS
Prepare the Chicken
Marinate: In a bowl, coat the chicken breasts with buttermilk and let sit for at least 10 minutes (this keeps them juicy!).
Bread the Chicken: In another bowl, mix flour, salt, black pepper, smoked paprika, garlic powder, and cayenne. Dredge each chicken breast in the flour mixture, shaking off excess.
Cook the Chicken
Pan-fry: Heat olive oil or butter in a skillet over medium heat. Cook the chicken for 4-5 minutes per side, or until golden brown and cooked through (internal temp: 165°F).
Make the Glaze & Sauce
Glaze: In a small saucepan over low heat, combine Honey Jalapeño Peach Jam and apple cider vinegar. Stir until melted and well combined.
Sauce: In a separate bowl, mix mayonnaise, honey, Garlic Scape Dip Mix, Dijon mustard, and lemon juice.
Assemble the Sandwich
Glaze the Chicken: Brush the cooked chicken with the sweet & spicy glaze.
Build It: Spread honey-garlic sauce on the bottom bun, add arugula, glazed chicken, pickles (if using), and top with the toasted brioche bun.
