Jam Swirl Cheesecake Bars

Ingredients
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup unsalted butter, melted
2 tbsp granulated sugar
For the Cheesecake Filling:
16 oz (2 blocks) cream cheese, softened
½ cup Fingerlakes Honey Company honey
1 tsp vanilla extract
2 large eggs
½ cup sour cream
1 tbsp cornstarch
For the Honey Jam Swirl:
½ cup Fingerlakes Honey Company Jam (choose from Honey Cherry, Honey Concord Grape, Honey Spiced Pear, Honey Plum, or Honey Peach, Honey Strawberry, Honey Blackberry and more!)
1 tsp lemon juice
DIRECTIONS
Preheat & Prepare Pan: Preheat your oven to 325°F (163°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Make the Crust: In a bowl, mix together graham cracker crumbs, melted butter, and sugar until well combined. Press firmly into the bottom of the prepared pan. Bake for 8 minutes, then set aside to cool.
Prepare the Cheesecake Filling: In a large bowl, beat cream cheese and honey until smooth. Add vanilla extract, eggs (one at a time), sour cream, and cornstarch, mixing until fully combined.
Make the Jam Swirl: In a small bowl, mix your chosen Fingerlakes Honey Jam with lemon juice to loosen it up.
Assemble & Swirl: Pour the cheesecake filling over the cooled crust. Dollop spoonfuls of your Honey Jam on top and use a knife or toothpick to swirl it into the batter.
Bake: Bake for 30-35 minutes, or until the center is just set (a slight jiggle is okay). Turn off the oven and let the cheesecake sit inside for 5 minutes before removing.
Chill & Serve: Let the bars cool at room temperature, then refrigerate for at least 2 hours before slicing.
