     There’s something magical about honey. It begins as a simple dance between bees and blossoms, where the hum of wings meets the beauty of wildflowers in bloom. Our bees spend their days visiting thousands of flowers, gathering nectar and bringing it back to the hive, where the real transformation begins. With patience and care, the hive turns that nectar into the golden sweetness we all know and love. When it’s finally ready, we gently harvest it, grateful for the bees and the land that made it possible. 

​     At Fingerlakes Honey Company, our bees forage freely across the rolling meadows and wooded edges near Cayuga Lake, where wildflowers bloom abundantly throughout the seasons. From field to hive to table, Fingerlakes Honey is never anything more or less than nature intended it to be. That which the bees give us, we give you. When we say 100% raw & lightly strained honey, we mean it! Our honey is never heated or filtered, preserving the natural pollen, enzymes, and character that make wildflower honey so special.

​     Wildflower honey varies from season to season, depending on the weather, plant life, and foraging patterns of the bees. In spring, the honey is light and floral, thanks to blooming dandelions, clovers, and early fruit blossoms. In autumn, it deepens in color and flavor, infused with goldenrod, asters, and late-blooming herbs. This seasonal ebb and flow means each jar captures a moment in time—no two batches are ever quite the same.

​     Producing wildflower honey can be difficult and yields are unpredictable, but in the opinion of Fingerlakes Honey Company owners Tom and Stacie Filer, it is more important to focus on quality than on quantity. We believe real honey should reflect its surroundings, alive with the character of the land, the work of the bees, and the passing of time. Each jar is a snapshot of nature’s rhythm, captured and shared with care.

   Honey bees are the most prolific honey makers on the planet. We make sure that we only take the surplus honey and beeswax from the hives so that our bees can thrive! What's The Difference?

SPRING HONEY

Our spring honey is made from spring and early summer flowers such as dandelion, honeysuckle, locust trees, fruit flowers, and clover. Our spring honey is typically lighter in color and has a sweet, flowery flavor and a pleasing mild taste.

Harvested in the Summer (mid June)

AUTUMN HONEY

Our autumn honey is made from mid-summer to autumn flowers such as sunflowers, goldenrod, asters and other wild flowers. Our autumn honey is typically medium to dark amber in color compared to our spring honey. It's a honey with a stronger, fruity, caramel-like taste. Customers who buy this honey tell us they like it because it helps with their allergy issues.
